What psi should I be getting on the gauge when I do a compression check?
Title says which engine it's for.

id stab at about 120-160, as long as all are within about 20psi from the highest to the lowest value there shouldnt be too much of an issue

Anything above 90 should be enough to run. Unplug injectors and coil and hold wide open throttle.
If comp is low pop a couple of teaspoons of oil in the sparkplug hole and repeat the test to work out if leakage is from valves or rings.the oil will seal up the rings.

Ok so would it be safe to say my engine has been opened up at some point as I'm getting 208, 209,210 and 205psi? Original owners manual says the motor has a 9.2:1 ratio. Car has done 261k km.

Dont have the data on your specific engine, but most of the cc variants was 1400kpa (203psi)
Make sure you test with the engine warm, plugs all out and throttle wide open....those figure you post look fine just make sure no one cylinder isnt more than 10% higher or lower than the rest

Would it be fine to turbo my 61 with it's supposedly 9.2:1 factory compression ratio and those psi figures?

You can turbo just about anything :) Will go boom! will depend on how much boost, fuel type used and tune...
